100% BIGA. A touch of sourdough. Where tradition meets obsession. Biga is a classic Italian technique – a slow pre-ferment that allows the dough to develop over time. Used for generations in artisan baking, it’s traditional not just because it’s old, but because it embodies the core principles of craft:

The result? A crust that’s light, airy, and bursting with deep, complex flavour. Easy to digest, beautifully blistered when baked, and true to the spirit of Naples. At Zini’s we honour this tradition while giving it a modern twist: we add Sourdough starter, use higher hydration, and allow long cold fermentation. Here, precision (BIGA) meets character (Sourdough).
Our Sourdough Starter has been carefully nurtured for over five years, since the founding of Nena Bakery so every pizza carries not just exceptional aroma and depth, but a touch of history.
Our pizzas are the main event - built around simple, great-tasting combinations and topped with carefully chosen ingredients. Alongside them, we’ve got a few sharing antipasti and a small selection of pasta dishes, all inspired by Italian classics and made with ingredients we really believe in.
We’ve put together a great selection of wines, beers and cocktails. From crisp whites to easy-drinking reds and classic Italian lagers, everything’s chosen to pair perfectly with the food.
